Simple Rustic Italian Sausage Tortellini Soup…

We’re on the cusp of spring here in southeast Texas but as the weather can change day to day, shoot, sometimes hour by hour, another cold blast has come in and that means soup for dinner! Or as my mom would say “it’s a soup kind of day!”

I first discovered this Rustic Italian Tortellini and Sausage Soup in Taste of Home’s Simple and Delicious magazine. I loved those magazines when I was first learning how to cook.

This soup has been a family favorite since the day I made it–at least over 15 years now! I love how quickly it comes together and you can even do some make ahead prep to make it even faster come dinner time. Seriously, I can throw everything in the pot in under 10 minutes, bring it to a boil then simmer for about 20 minutes and dinner is done in under 30 minutes!

Wholesome Ingredients and Make Ahead Tip

If I’m feeling organized or want to do some meal prep on the weekend, I will sometimes brown up the ground Italian turkey sausage and keep it in an airtight container in the refrigerator until it’s time to assemble the rest of the recipe ingredients in my saucepan.

I also love that it uses minimally processed ingredients (like the canned tomatoes and tortellini) and also uses lots of fresh ingredients. I feel good serving this healthy soup to my family.

I’ve modified the original recipe over the years so am sharing this family favorite with you all. The original recipe called for Italian turkey sausage in the casing but now it comes in a bulk package so that’s what I buy. I also use the entire package.

I also upped the chicken broth quantity as the original recipe called for water in addition to the chicken broth but we like the richer flavor of all chicken broth.

The recipe calls for chopping the baby spinach. Sometimes I skip this step and just throw the whole baby spinach leaves in there. They wilt quickly and truthfully, I’m not sure if chopping them is worth the effort, at least for my family. If your family likes the spinach a little more spread throughout, then go for the chopping!

Simple Comfort Food Soup

We like to serve this Rustic Italian Tortellini and Sausage Soup with some fresh baguette bread and a garden salad. To me, it’s a perfect comfort food that I’d enjoy just about any time of year (except during our blazing hot Texas summers!) I hope you enjoy it as much as we do!

Ingredients

  • 1 pound Italian turkey sausage ground
  • 1 cup onion chopped
  • 6 garlic cloves minced
  • 4 cups reduced-sodium chicken broth
  • 14.5 ounces canned diced tomatoes undrained
  • 9 ounces cheese tortellini refrigerated or frozen
  • 6 ounces baby spinach coarsely chopped
  • 3/4 teaspoon dried basil
  • 1/4 teaspoon pepper
  • 1 dash red pepper flakes crushed
  • 1/3 cup Parmesan cheese shredded, optional

Instructions

  • Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water and tomatoes. Bring to a boil.

  • Add tortellini; return to a boil. Cook for 5-8 minutes or until almost tender, stirring occasionally. Reduce heat; add the spinach, basil, pepper and pepper flakes. Cook 2-3 minutes longer or until spinach is wilted and tortellini are tender. Serve with cheese if desired.

  • Freeze option: Place individual portions of cooled soup in freezer containers and freeze. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary.
